AUDREY'S BREAD 
3 pkgs. dry yeast
3 c. warm water
1 scant c. sugar (I use 1/2 - 2/3 c.)
1 tbsp. salt
1 1/3 c. oil
4 beaten eggs
2 c. fresh mashed potatoes (or instant)
16 c. flour

Dissolve yeast in warm water. Stir in sugar, salt, oil, eggs and mashed potatoes. Mix well. Stir in all the flour it will hold. Knead 2 to 3 minutes. Let rest 10 to 15 minutes. Knead 5 to 10 minutes until satiny and pops. Shape into loaves and put in oiled tins. Let rise. Bake at 375 degrees until done. Can hold in refrigerator 5 days. Freezes well.
