COCONUT CREAM PIE 
1 baked pie crust
3/4 c. sugar
1 stick butter
1/4 c. cornstarch
3 eggs, beaten
2 c. milk
1 tsp. vanilla
1 can coconut

Combine sugar, cornstarch and milk. Cook over low heat, stirring constantly until mixture begins to thicken. Add beaten eggs. Continue to cook until thick. Remove from heat. Add butter and vanilla. Beat with mixer until butter has melted and mixture looks creamy. Add 1 can coconut. Stir. Pour into baked pie crust. Top with Dream Whip or beaten egg whites.
