WHITE CHOCOLATE CHIP COOKIES
WITH MACADAMIA NUTS
 
1/2 c. unsalted butter, cut into 4 pieces, at room temperature
1/3 c. sugar
1/3 c. firmly packed golden brown sugar
1 lg. egg
1 tsp. vanilla extract
1 c. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
6 1/2 oz. white chocolate, coarsely chopped
3/4 c. macadamia nuts (about 3 oz.), halved

Preheat oven to 375 degrees. Lightly grease 2 cookie sheets. Using steel knife of food processor, blend butter, sugars, egg and vanilla until fluffy. Stop once to scrape down sides of work bowl after about 1 minute. Add flour, baking soda, and salt and mix until just combined, using 2-3 on/off times; do not over process.

Transfer to large bowl. Stir in chocolate and nuts. Mound dough by 1 1/2 tablespoons onto prepared sheets, spacing 2 inches apart. Bake until light brown around edges about 10 minutes. Cool on sheet 3 minutes. Transfer to rack.
