IMPOSSIBLE CHEESECAKE 
3/4 c. milk
2 tsp. vanilla
2 eggs
1 c. sugar
1/2 c. Bisquick baking mix
2 pkgs. (8 oz. each) cream cheese, cut into 1/2 in. cubes

1. Blend milk, vanilla, eggs, sugar and baking mix in blender on high speed for 15 seconds. Add cream cheese, blend on high 2 minutes.

2. Pour into greased pie plate, 9 x 1 1/4 inches.

3. Bake until center is set, 40 to 45 minutes at 450 degrees.

CHEESECAKE TOPPING:

Mix 1 cup sour cream, 2 tablespoons sugar, and 2 teaspoons vanilla.

Top with choice of fruit.
