RICE PUDDING 
4 eggs
1 c. sugar
2 c. half and half
1 tsp. vanilla
2 c. cooked rice (better to do this a day ahead)
1/2 stick butter
cinnamon, nutmeg and raisins (if desired)

Melt butter in a 2-quart casserole. Beat eggs and add sugar, milk, vanilla and rice. Put mixture in casserole.

Bake, uncovered, about one hour at 350°F. Recipe may be halved.
