RITA'S CUKE CRISPS 
6 cukes, sliced very thin with peelings
1 red onion, sliced the same
1 green pepper, sliced the same
1 red pepper, sweet, sliced the same
3 cloves garlic (whole)

BRINE:

2 c. white vinegar
3 1/2 c. sugar
1/4 c. Kosher salt

Mix brine together. Do not heat. Pour over above vegetables. Let stand overnight in refrigerator. Put in jar and refrigerate. Keeps for months. Can be eaten right away.
