RICE AND ARTICHOKE SALAD 
1 pkg. MJB chicken or herb and butter rice
2 jars marinated artichoke hearts
1/2 bell pepper, diced
4 to 5 green onions, sliced
1/3 to 1/2 c. mayonnaise (to taste)
1/2 tsp. curry powder
Salt and pepper to taste
8 to 10 large stuffed green olives

Cook rice and cool. Drain artichokes and SAVE LIQUID. Add it to mayonnaise, with curry powder, salt and pepper. Mix with all other ingredients. Prepare at least 6 hours before serving to allow flavors to steep. YUMMY! Serves 6 to 8 as side dish.
