STEAMED WHITE TEA CAKES 
1 1/4 c. sugar
2 c. rice flour or unbleached flour (or 1 c. of each)
3 tsp. baking powder
1/2 tsp. salt
1 1/2 c. water
1 tsp. anise extract
1/2 c. grated fresh coconut
Food coloring, optional

Grease small cupcake molds. Combine sugar, flour(s), baking powder, salt, and water. Mix until it has the consistency of thick batter. Stir in anise extract. If desired, divide batter and add a few drops of preferred food coloring to each portion.

Pour into cupcake molds, filling them about 2/3 full. Arrange in a steamer and steam for 20 minutes or until cakes are done. Serve with grated coconut on top.
