DANISH CHEESE BALL 
8 oz. Danish Bleu cheese or other Bleu cheese, crumbled
1/2 c. butter, softened
1 (3 oz.) pkg. cream cheese, softened
1 tbsp. cognac
1 tsp. grated onion
3/4 c. chopped pecans, toasted

Combine Bleu cheese, butter, cream cheese, cognac and grated onion in a medium mixing bowl; beat at medium speed of an electric mix until smooth. Shape cheese mixture into a ball. Roll in chopped pecans. Wrap cheeseball in wax paper, and chill at least 1 hour. Yield: 1 (4 inch) cheese ball.
