SPANISH RICE 
1 1/2 c. uncooked instant rice
1/2 c. chopped peppers
1/2 c. chopped onions
1/4 c. oil
1/4 tsp. pepper
8 oz. tomato sauce
1 tsp. salt
8 oz. water

Saute onions, peppers and rice in oil until golden brown, stirring often. Add tomato sauce, water, salt, and pepper. Simmer until liquid is absorbed, about 5 minutes.
