SHRIMP SCAMPI 
1 1/2 lbs. fresh lg. shrimp, shelled & deveined
4 lg. garlic cloves, pressed & crushed
1/2 c. butter
1 tsp. lemon juice
1 tsp. salt
1/2 tsp. oregano leaves
1/8 tsp. pepper
1/4 c. chopped parsley (opt.)

Or 2 1/2 pounds frozen large shrimp.

Preheat broiler. Place shrimp in single layers in bottom of broiling pan. In a 1 quart saucepan, mix garlic, butter, lemon juice, salt, pepper and oregano and heat over low heat. Pour mixture over shrimp to coat evenly. Broil shrimp 5 to 8 minutes until shrimp turn pink. To serve, spoon shrimp and liquid onto a warm platter or individual warm dishes and garnish with parsley.
