APPLE CAKE 
4 c. apples, coarsely chopped
2 c. sugar
3 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 eggs
3/4 c. oil
1 c. pecans, chopped

Mix apples and sugar together. Set aside and let stand for at least 1 hour. In separate bowl, mix flour, baking soda, salt and cinnamon together. Beat eggs and oil together. Add egg mixture to apple mixture, mixing completely. Add flour mixture to the above and fold in pecans. Bake in greased funnel or Bundt pan in 325 degree oven for 60 minutes.

NOTE: Bake 22 minutes for small Bundt pan.
