ANZAC COOKIES 
1 c. sugar
1 c. flour
1 c. coconut
1 c. rolled oats
1 egg, optional
4 oz. butter
2 tbsp. molasses
1 tsp. baking soda
2 tbsp. boiling water

Mix dry ingredients well. Melt butter and molasses together, add water and soda. Pour into center of dry ingredients. Mix to a moist but firm consistency. Drop by teaspoon on to cool, greased trays. Bake in slow oven (325 degrees) for 20 minutes until golden brown. Cool for a few minutes before removing to wire racks.
