1 1/2 lb. hamburger, browned 1 16 oz. can refried beans 1 c. salsa (mild, medium or hot) 16 oz grated cheddar cheese 5 chopped scallions 1 medium chopped tomato 8 oz. sour cream 1/2 to 1 c. chopped black olives tortilla chips Preheat oven to 350°F. Brown beef, drain. Mix refried beans and salsa. Place 1/2 of the hamburger on bottom of oven safe dish. Spread 1/2 of the bean-salsa mixture over beef. Sprinkle 1/2 of scallions over beans. Spread 8 ounces cheese over scallions. Repeat layers. Spread sour cream over top. Spread tomatoes around outside of dish. Spread olives next to tomatoes. Use remaining scallions and place in center of dish. Cover and heat for 30 minutes. This mixture can also be used in burrito shells. |
