MEXI-CASSEROLE 
1 1/2 lb. ground beef
1 pkg. taco seasoning mix (reserve 1 tsp. for topping)
1 can tomato soup
1 can chili beans (omit this if you prefer)

Topping:

1 c. pancake mix
1 tsp. taco seasoning
1 c. shredded Cheddar cheese
1/2 c. milk
1 egg

Brown ground beef. Drain. Stir in seasoning mix, soup and beans. Simmer while preparing the topping.

Combine all topping ingredients. Blend well. Pour meat mixture into 3-quart casserole. Spoon topping over meat.

Bake, uncovered, in 400°F oven for 20 to 25 minutes, until golden brown.
