SAUERKRAUT 
2 tbsp. shortening
1 onion, diced
1 qt. sauerkraut
1 raw potato, grated
1 tsp. caraway seeds
Boiling water or soup stock
Brown sugar and a grated apple may be added

Heat fat in skillet. Cook onion until translucent, add sauerkraut. Cook 5 minutes. add potato and caraway seeds. Cover with boiling water or soup. Cook slowly 1/2 hour, cover well, cook 1/2 hour longer on range or oven.
