HONEY OF A COOKIE 
2 1/2 c. flour
1 c. sugar
2/3 c. butter
2 eggs
2 tsp. baking powder
1/2 tsp. pumpkin pie spice
1/4 tsp. salt
1 tsp. vanilla
1/2 c. shredded carrot (about 1 med.)
1/4 c. honey

Heat oven to 325 degrees. In large mixer bowl, combine flour, sugar, butter, eggs, honey, baking powder, pumpkin pie spice, salt and vanilla. Beat at low speed scraping bowl often, until well mixed, 2 to 3 minutes. Stir in carrot. Shape rounded teaspoonfuls of dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. Bake 13 to 18 minutes or until edges are lightly browned. Remove immediately. Makes about 4 dozen.
