WHITE LAYER CAKE 
3 1/4 c. cake flour
1 tsp. salt
5 tsp. baking powder
2 c. sugar
3/4 c. shortening
1 c. milk
2/3 c. milk
1 1/2 tsp. almond extract
3/4 c. egg whites
1/2 c. sugar

Sift together cake flour, salt, baking powder and 2 cups sugar. Add shortening and 1 cup milk. Beat 2 minutes until well blended. Add 2/3 cup milk and extract. Beat 2 minutes more until blended.

In a separate bowl beat egg whites until foamy and add 1/2 cup sugar, 1 tablespoon at a time, beat after each addition until smooth, glossy and holds soft peaks. Fold meringue into batter. Grease and flour 3 layer pans.

Bake at 350°F for 30 minutes or until cake tests done (a toothpick inserted in center of cake comes out clean).
