ONION JELLY 
1 lb. red onions
1/2 c. vinegar
1 (1 3/4 oz.) pkg. powdered fruit pectin
1 c. white grape juice
3 1/2 c. sugar

Put onions through food grinder or food processor using coarse blade or chip finely to make 2 cups (including any onion juice). In saucepan combine chopped onion, onion juice and the grape juice. Bring to boiling, remove from heat. Strain mixture through jelly bag or double thickness of cheesecloth set in colander, reserving liquid. Measure strained onion liquid and add water to make 3 cups.

In large kettle combine stained liquid mixture, vinegar and pectin. Cook and stir until mixture comes to a full rolling boil (a boil that cannot be stirred down). Stir in sugar. Return to a full rolling boil. Boil 1 minute. Stir constantly. Remove from heat. Skim off foam with a metal spoon. Ladle into clean hot half pint jars, leaving 1/4" headspace. Yield: 5 half pints.
