ZUCCHINI AND CORN CASSEROLE 
1 lb. zucchini, wash and slice 1/2 inch pieces
1 (10 oz.) frozen whole kernel corn or fresh corn
2 tbsp. chopped onions
1 tbsp. butter
1 c. grated Swiss cheese or any kind of cheese
2 eggs, slightly beaten
1/2 tsp. salt
1/4 c. bread crumbs
2 tbsp. Parmesan cheese
2 tbsp. butter, melted

Cook sliced zucchini until tender, drain and mash slightly. Melt butter and cook onions until clear. Mix zucchini, corn, salt, onions, Swiss cheese and eggs. Put in 2 quart casserole.

Mix bread crumbs, Parmesan cheese and melted butter; sprinkle on top of casserole. Bake 350 degrees for 30 minutes or until golden.
