FUNNEL CAKE 
2 eggs
1 tbsp. vegetable oil
2 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1 1/3 c. flour
Powdered sugar

Heat 2 inches vegetable oil in skillet to 375 degrees. With wire whisk beat eggs, 1 tablespoon vegetable oil, sugar, baking powder, salt and milk until blended. Gradually beat in flour. If batter is too thick, add 1-2 tablespoons milk.

Use funnel with 1/2 inch opening, hold finger over opening and pour 1/4 cup batter into funnel. Swirl batter in heated oil, starting in center of pan and working outward to make a 6 inch spiral. Draw last of batter over spiral to make a lacy pattern. Fry 1-2 minutes on each side or until golden. Drain on paper towel. Sprinkle with powdered sugar.
