SWEET CUCUMBER PICKLES | |
3 gallons sliced cucumbers Put in a churn and soak in brine for 8 days. BRINE: 2 c. salt 1 gallon water Pour off brine and rinse in cold water. Soak in alum water overnight. ALUM WATER: 1 box alum 1 gallon water Drain; pour 1 gallon of vinegar and 1 box pickling spices over cucumbers. Let soak overnight. Drain the next day and use 10 pounds sugar and a layer of cucumbers, then a layer of sugar. Continue until all used. Leave in churn, covered. Will keep a long time. |
