POTATO CHEESE PIE 
4 lg. eggs
12 oz. pared, grated, potatoes
1 1/3 c. cottage cheese
1/4 c. diced green pepper
2 tbsp. diced onion
2 tsp. salt
1/8 tsp. pepper

Preheat oven to 375 degrees. Beat eggs well. Add remaining ingredients, combine. Spray 5 1/4 x 1 1/2 inch foil tart pans with non stick spray. Divide potato mixture into pans, baking until top of each pie is golden at 45 minutes.
