POTATO CHEESE PIE 
3 lbs. potatoes
Salt and pepper to taste
3 tbsp. softened butter
2 eggs, beaten
Bread crumbs
1/2 c. milk
Mozzarella or Muenster cheese, shredded
1/2 c. grated Parmesan cheese

Boil potatoes with jackets on until tender. Peel, mash, or force through a ricer. Add butter, milk, eggs, grated cheese, salt and pepper. Beat until creamy and light. Butter a pie plate or pan and sprinkle with bread crumbs. Arrange half of the mashed potatoes in a layer in prepared pie plate, cover completely with Mozzarella or Muenster cheese and top with remaining mashed potatoes. Sprinkle with bread crumbs and dot with butter. Bake in a hot 375 degree oven until top is brown and crusty. Serve hot.
