SWEET POTATO CAKE 
1 1/2 c. cooking oil
2 c. sugar
4 eggs, separated
4 tbsp. hot water
2 1/2 c. sifted cake flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated can sweet potato
1 c. nuts
1 tsp. vanilla flavoring

Combine cooking oil and sugar. Beat until smooth. Add egg yolks. Beat well. Sift together with dry ingredients. Add to mixture, stir in potatoes, nuts and flavoring. Beat egg whites until stiff. Fold into mixture. Bake at 350 degrees for 25 minutes. Use three 9 inch cake pans.
