RICE AND GARBANZOS 
2 c. water or chicken broth
1 tbsp. butter
1 tsp. salt
2/3 c. rice
1 clove garlic
1 (16 oz.) can stewed tomatoes
1 (20 oz.) can chick peas (Garbanzos)
Sweet Italian sausage, optional
2 onions, sliced thin
3 tbsp. oil

Bring water to boil. Add salt, butter and rice (note: leave out salt if using salted chicken broth). Simmer, covered for about 20 minutes.

While rice is cooking saute garlic and onion; add stewed tomatoes; cover and simmer 10 minutes. Add drained beans and cook uncovered 10-20 minutes until liquid is cooked down. Cut up already cooked sausage (optional). Stir in all ingredients and serve.
