SHARON DRUCKER'S PERFECTLY
PEACHY BREAD
 
1 c. pureed peaches (canned or peeled fresh)
1 c. sugar
2 eggs
1/2 c. butter, cut in 8 pieces
1/2 tsp. vanilla
2 c. flour, sifted
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon or nutmeg

Mix peaches, sugar and eggs. Add butter and blend. Add vanilla and dry ingredients, blend. Pour mixture into greased loaf pan and bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Let cool in pan 10 minutes, then turn out onto rack to cool.
