RED VELVET CAKE WITH CREAM
CHEESE ICING
 
Cake:

1-1/2 c. sugar
2 eggs
2-1/2 c. plain flour
1 tsp. vinegar
1 tbsp. cocoa
1-1/2 c. Wesson oil
1 c. buttermilk
1 tsp. vanilla
1 tsp. baking soda
1 bottle red food coloring

Cream sugar, oil, eggs, vanilla, soda and cocoa. Add alternately flour, butter and buttermilk. Pour into 2 well greased and floured cake pans.

Bake at 350°F for 30 minutes. Frost with cream cheese frosting.

Cream Cheese Frosting:

8 oz. cream cheese, softened
1 stick butter
1 box powdered sugar

Cream butter and cream cheese together. Gradually add powdered sugar until desired consistency. After frosting cake. Store in refrigerator.
