GARCHICHIJ SOUS (MUSTARD SAUCE) 
1 tbsp. dry mustard
2 tbsp. sugar
3 egg yolks
2 tbsp. olive or other salad oil
1/2 c. vinegar
1 tbsp. capers
1 tbsp. chopped green olives

Mix mustard with sugar. In top of double boiler, beat egg yolks. Add mustard and sugar mixture, then slowly beat in the oil and vinegar. Cook over moderate heat in double boiler and continue to beat until thick. Add capers and olives Yield: 1 cup.
