CREAM CHEESE CUPCAKES 
3 (8 oz.) containers cream cheese
1 c. sugar
5 eggs
1 1/2 tsp. vanilla
1/2 pt. sour cream
2 tbsp. sugar
1/4 tsp. vanilla

Bring cream cheese to room temperature. Cream in bowl and add 1 egg at a time. Slowly add 1 cup sugar and vanilla. Batter will be thin. Pour into paper-lined pans about 1/8 inch from top. Bake in 300 degree oven about 45 minutes until cracks appear in top. Remove from oven and cool about 5 minutes.

Add 2 tablespoons sugar and 1/4 teaspoon vanilla to sour cream. Put 1 teaspoon on top of each cupcake and return to oven for 5-7 minutes. Cool.

Top with pie filling (cherry, strawberry, or blueberry). Refrigerate. Can be frozen.
