BAKED ZUCCHINI SPEARS | |
3 med. zucchini 3/4 c. Italian bread crumbs 1/2 tsp. salt 1 egg, slightly beaten Cut zucchini in halves, crosswise, cut again into 6 wedges lengthwise. Place in boiling water for 3 minutes, drain well. In a shallow dish, combine bread crumbs with salt. Dip zucchini in egg and then coat with bread crumbs. Place on a lightly greased, foil lined baking pan. Bake 4 minutes. Turn and bake until lightly browned about 3 minutes more. (350 to 375 degree oven) |
