BAKED ZITA 
1/2 lb. Italian sausage, cut into pieces
1/3 c. onions
1 clove garlic, minced
1/2 c. sliced, fresh mushrooms
2 c. eggplant, pared and cut into julienne strips OR
2 c. thinly sliced zucchini
1/4 tsp. salt
Dash pepper
8 oz. cut zita, uncooked
3 1/2 c. spaghetti sauce
2 c. shredded Mozzarella cheese
1/2 c. grated Parmesan cheese

Heat oven to 350 degrees. In large skillet, brown sausage; drain. Add onions, garlic, mushrooms, and eggplant or zucchini. Saute until veggies are tender, but not brown. Drain excess fat. Add salt and pepper; set aside.

Cook zita 10 minutes; drain. Combine zita with 2 cups sauce. Spread 1/4 cup sauce on bottom of 9-inch square baking dish. Arrange half of zita in pan.

Spread veggie mixture evenly over zita. Top with 1/2 cup sauce, 1/2 of Mozzarella cheese and half of Parmesan cheese. Cover with remaining zita, sauce and cheeses. Bake 25 minutes or until hot and bubbly. Yield 4-6 servings.

Very good recipe. I used both zucchini and eggplant, and omitted the mushrooms (didn't have any on hand) and the salt, and used only 1/2 of the cheese. Next time I may try it with bell peppers too.
