SHRIMP AND OKRA GUMBO 
1 c. cooking oil
2 c. flour
1 sm. onion, minced
1 can Rotel tomatoes
4 qt. water
1 lb. cleaned shrimp
2 tbsp. chopped onion tops
2 cans crab or chicken meat
1 pkg. frozen okra
2 tbsp. chopped parsley
Salt and pepper to taste

Brown oil and flour until dark on low fire. Stir well. Add minced onions and stir until onions are soft. Stir in can of Rotel tomatoes. Mix well on low fire. Add water and boil for 1 hour on low fire. Add final ingredients and boil for an additional 2 hours. Serve in soup bowl with rice. Serves 10 people.
