PRALINE TOPPED OATMEAL CAKE | |
1 1/3 c. boiling water 1 c. quick cooking rolled oats 1 1/2 c. sifted flour 1 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1/2 c. butter 1 c. brown sugar 1 c. sugar 2 eggs 1 tsp. vanilla Pour boiling water over oats; cover and let stand 20 minutes. Mix flour, soda, salt and cinnamon. Cream butter, add sugars gradually and cream until light and fluffy. Add unbeaten eggs, one at a time, beating well after each addition. Add vanilla and oatmeal mixture and blend well. Add flour mixture gradually. Mix only enough to keep batter smooth. Pour batter into greased 13"x9" pan and bake at 350 degrees for 30 to 40 minutes. After cake is baked, spread Praline Topping over hot cake, put under broiler until topping is brown and bubbly. PRALINE TOPPING: 1/2 c. brown sugar 2 tbsp. flour 1/4 c. butter 1/2 c. chopped pecans 1 c. coconut Mix all ingredients. Spread on hot cake and broil until brown and bubbly. |
