COMPANY CARROTS 
2 1/2 lb. carrots
1/4 c. carrot water
1 c. mayonnaise
2 tbsp. horseradish
2 tbsp. onion
Salt & pepper to taste
2 tbsp. butter
1/4 c. cracker crumbs
2-3 tbsp. parsley

Cut carrots into 2 inch strips and cook. Save 1/4 cup of the carrot water. Place carrots in a 13 x 9 inch flat baking dish. Mix carrot water, mayonnaise, horseradish, onion, salt and pepper; cover carrots. Dot with butter. Top with cracker crumbs and parsley. Bake at 375 degrees for 15-20 minutes.
