SCALLOPED POTATOES 
5 lg. potatoes
4 tbsp. butter
1/2 c. chopped onions
5 1/2 tsp. flour
2 tsp. salt
1/4 tsp. pepper
2 c. milk
8 oz. Cheddar cheese

Pare potatoes and cut into 1/2 inch crosswise slices. Place in a buttered 1 1/2 quart baking dish. In a medium saucepan melt butter, add onion and cook until tender. Remove from heat. Blend in flour, salt and pepper. Stir in milk.

Return to heat and cook, stirring constantly, until mixture thickens slightly and comes to a boil. Pour over potatoes and cheese layered in dish. Bake covered, in a 350 oven for 30 minutes. Uncover and put a layer of cheese on top of mixture, and bake 1 hour longer, or until potatoes are tender. Makes 6-8 servings.
