SAURED SALAD 
1 qt. sauerkraut, well drained
2 c. celery, diced
1 green pepper, diced
1 sm. onion, chopped
1 sm. jar pimento, diced
1 tsp. salt
1 1/2 c. sugar
1/2 c. vinegar (preferably cider vinegar)

In large bowl combine sugar and vinegar, stir so sugar dissolves. Add rest of ingredients, stir well. Let stand in refrigerate for 24 hours, stirring occasionally.
