SPAGHETTI SAUCE, TOMATO - LESS 
1/2 c. beets
4 stalks celery, sliced
4 carrots, sliced
1 green pepper, diced
1 c. warm water

Dice beets. Chop the best greens. Steam the beets, celery, carrots, green pepper, the best greens, and warm water for 20 minutes or until tender.

Heat a pan and saute: 2 lg. onions, chopped 1/4 c. water Pam spray

Add to vegetables and mash or puree in blender. Dissolve: 1/2 c. warm water

Add to vegetables with: 2 tbsp. tamari 2 tbsp. mirin 1 tsp. oregano 1 tsp. basil Pinch of cayenne

Simmer sauce 5 minutes. Serve over whole wheat spaghetti or buckwheat noodles. Per serving: 130 calories, 4 gm protein, 14 gm carbohydrates, and 2 gm fat.

Mirin is a sauce found in the macrobiotic section of a health food store.
