FAST AND EASY PUMPKIN COOKIES 
1 (15 oz.) can Libby's pure pumpkin
1 box spice cake mix (Betty Crocker works well)

Preheat oven to 350°F.

In a large bowl, stir together pumpkin and cake mix until well combined. Drop by tablespoons onto lightly greased cookie sheet and bake at 350°F for 10 to 12 minutes.

PUMPKIN BREAD VARIATION:

Add 1 egg to mixture, spoon into greased loaf pans, and bake at 350°F for 40 to 45 minutes. Serve warm with whipped cream.

I tried the pumpkin bread variation of this recipe and it was delicious! I added a little cinnamon to the egg. It was so good, that my husband even asked me for a second serving!

I made this with white cake mix, added two teaspoons of pumpkin spice and two eggs -- it came out soooo good. Easy, fast, delicious.
