MOM'S BANANA MUFFINS 
3 large bananas, mashed
3/4 cup white sugar
1 egg, slightly beaten
1/3 cup melted butter
1 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Mash bananas. Add sugar and slightly beaten egg and mix well. Add the melted butter. Make a well in the middle and add all the dry ingredients. Pour into prepared muffin tins 2/3 full.

Bake in a preheated 375°F oven for 20 minutes.

I also remember my mother used to sprinkle brown sugar to the tops of the muffins before baking. This makes them crunchy on top.
