DOUGHNUTS 
2 c. brown sugar
2 eggs, beaten lightly
4 tbsp. melted butter
1 c. milk
4 c. flour
3 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt

Mix eggs and butter. Sift the dry ingredients together and add to the eggs and butter mixture (more flour might be necessary to make a dough just soft enough to handle.) Cover the board with flour and heat the fat for frying. Roll out a little dough at a time and cut into rings with an open doughnut cutter, cutting all the doughnuts before frying. When the fat is hot enough for the dough to rise to the top quickly, start to fry the doughnuts. Cook 3 to 4 minutes.
