GREEK SALAD 
2 lbs. ripe tomatoes
1 c. sliced onion
1 c. coarsely diced cucumber
1/2 c. ripe olives
3/4 c. coarsely diced green pepper
1/4 tsp. oregano
1/4 tsp. basil
1/2 lb. Feta cheese, diced
1/4 c. wine vinegar
1/2 c. olive oil
Salt and pepper to taste
Lettuce and/or spinach

Dice tomatoes coarsely. Combine tomatoes, vegetables, olives, herbs, cheese, vinegar, and oil. Mix lightly. Season to taste with salt and pepper. Chill several hours before serving. Before serving, mix in spinach and/or lettuce or serve the salad on a bed of greens.
