GREEK SALAD 
Even though this salad has only a small amount of dressing, the combination of greens, mint, olives, and cheese makes it exceptionally flavorful.

1/2 sm. head romaine lettuce
2 c. trimmed spinach leaves
2 tbsp. peeled, seeded, and chopped cucumber
3 tbsp. dry curd, low fat cottage cheese or farmer cheese
2 tbsp. minced fresh mint or 1 1/2 tsp. mint flakes
1 tbsp. rinsed and crumbled feta cheese
2 med. size pitted ripe olives, chopped fine
1 tsp. olive oil
1 tsp. lemon juice
1 clove garlic, minced
1/8 tsp. black pepper

1. Wash the romaine and spinach leaves, pat them dry with paper towels, and tear into bite size pieces. Place in a large bowl with the cucumber, cottage cheese, mint, and feta cheese; set aside while preparing the dressing.
