APPLESAUCE RAISIN MUFFINS | |
1 lg. egg 2 tbsp. vegetable oil 1 1/2 c. unsweetened applesauce 1 c. unbleached flour 1/2 c. whole wheat flour 1/2 c. bran (wheat or oat, or mixed) 3/4 tsp. baking soda 2 tsp. baking powder 1 tsp. cinnamon 1 tsp. nutmeg 3/4 c. raisins 1 tbsp. Equal or Sugar Twin granules (optional, for added sweetness) Beat together egg, oil, and applesauce. Add flours and bran, baking soda, baking powder, and spices; beat well. Stir in raisins. Spoon batter into oiled and floured muffin wells or non-oiled Teflon muffin pan. Bake at 375 degrees for 20-25 minutes or until firm to the touch and browned. Cool on wire racks. Makes 9 large or 12 smaller muffins. |
