SHEPHERDS PIE (BRITISH) 
Before we start, let us be clear and lets get it right. Shepherds pie is made with lamb, cottage pie is made with beef. Never in the history of the British isles has cheese ever come close to either. If you see cheese anywhere near a recipe for either, put it down to the USA's obsession to add cheese to anything that moves - it doesn't generally belong with meat unless you desire lead in your stomach, this said.

1 lb. lean lamb, minced
1 large onion, sliced
1 medium carrot, chopped
1 stick celery, chopped
enough beef stock to cover
salt and pepper
3 to 4 tsp. corn starch or 2 Bisto (if you know what it is) and 1 corn starch
2 lb. good mashing potatoes
4 oz. (1 stick) butter
salt and pepper

Let's get this right and the best way: Add minced lamb into a casserole dish, add onion, carrot, celery, beef stock, corn starch and/Bisto/corn starch, salt and pepper, to taste, and stir.

Cook in a slow oven, say 275°F for 2 hours. You can do all this on stove top for about 20 minutes BUT the flavor is never the same.

When complete, drain off gravy and reserve.

Boil and mash potatoes with milk, butter, salt and pepper, however DO NOT make it into a wet paste. It should be firm and almost chunky.

Add back enough gravy to the meat to make it moist. Gently add the potato to the top and build up. Spread with a fork, finally making fork marks both up and down and across to form a basket like pattern.

Put oven temperature at 400°F, then bake until potato is crispy and golden on the peaks (about) 30 minutes.

Serve with remaining gravy and steamed cabbage (preferably Savoy, if you can get it). NO CHEESE, PLEASE.

While he is correct and this will make quite a tasty meal I have several comments. Use lamb stock if you can. Beef stock dulls the yummie lamb flavor some. Second Neil is more than cocky and his arrogance shows in his instruction to make this. Also I have seen variations of the shepard's pie recipes that include cheese from before America was founded. Many of these come from the UK. So if it's an American thing please explain. With a few edits this could be a great listing. I was generous with a 2. Take out the cockiness and the snide commentary and maybe I will up my score.

Great recipe! For us poor or cheap Americans, beef and beef stock can be substituted, but not recommended. Hand mashed, slightly chunky potatoes, but my European relatives and I use about a 60/40 potato/butter mix with whole or butter milk only to fluff. Drain your potatoes very well and salt the water. Cook potatoes until just tender. Just my suggestion.

Brits still hold a grudge against Americans because of the American Revolutionary War. That was the first war that the Brits have ever lost, and they are still mad about it. That's why they refuse to call us the United States, they still call us "the colonies". Get over it already!! Besides, the whole world knows that the English will never learn how to eat! All this over cheese really people? There are as many variations for this recipe the world over, as any other recipe. Eat it how you like it, cheese or no cheese. I doubt there is a law about cheese and who uses it what a laugh! You guys have your tea and we will gladly have good 'ole American coffee. At least it isn't a Haggis, now that's nasty.

I've had the Brit's version of Shepherd's Pie (Made by a Brit), and I've had it similar to the way originally posted here. Being a country boy from Texas, I'm more partial to the beef over lamb. Not all Yanks like Brit food. Just like not all Brits like good home cooked southern cooking.

Got quite a kick out of how to make Shepherds pie, been making it for about 50 years, recipe from English grandma who made it the American way, cheese, hamburger and all. I used Bisto in mine. Tasted so good no matter how it is made. Enjoy!

Love the humor of poor, mostly bashed Neil. Think about this people, we speak English and both our flags are red, white, and blue, um... so many photo ops with the Queen and US presidents... right... and they are all related by blood...so I hardly think we should be bickering over some nasty American cheese.
