SHEPHERDS PIE (BRITISH) 
Before we start, let us be clear and lets get it right. Shepherds pie is made with lamb, cottage pie is made with beef. Never in the history of the British isles has cheese ever come close to either. If you see cheese anywhere near a recipe for either, put it down to the USA's obsession to add cheese to anything that moves - it doesn't generally belong with meat unless you desire lead in your stomach, this said.

1 lb. lean lamb, minced
1 large onion, sliced
1 medium carrot, chopped
1 stick celery, chopped
enough beef stock to cover
salt and pepper
3 to 4 tsp. corn starch or 2 Bisto (if you know what it is) and 1 corn starch
2 lb. good mashing potatoes
4 oz. (1 stick) butter
salt and pepper

Let's get this right and the best way: Add minced lamb into a casserole dish, add onion, carrot, celery, beef stock, corn starch and/Bisto/corn starch, salt and pepper, to taste, and stir.

Cook in a slow oven, say 275°F for 2 hours. You can do all this on stove top for about 20 minutes BUT the flavor is never the same.

When complete, drain off gravy and reserve.

Boil and mash potatoes with milk, butter, salt and pepper, however DO NOT make it into a wet paste. It should be firm and almost chunky.

Add back enough gravy to the meat to make it moist. Gently add the potato to the top and build up. Spread with a fork, finally making fork marks both up and down and across to form a basket like pattern.

Put oven temperature at 400°F, then bake until potato is crispy and golden on the peaks (about) 30 minutes.

Serve with remaining gravy and steamed cabbage (preferably Savoy, if you can get it). NO CHEESE, PLEASE.

I was looking for a recipe that told the truly British way to make SHEPHERDS PIE, not cottage pie. Thankful to find this one. Should be like the Shepherds Pie I had in England. Thank you for posting this!! I did not take offense at the tone.... chalked it up to British Pride. So just make the recipe if you want to, and leave the nasty comments out, Americans.

This was delicious---be careful not to make too many potatoes. Also I was so amused by the author's small rant regarding Americans and cheese. I am an American and he/she is exactly right. I love cheese, but does it have to be on everything? We also left the lamb "chunkier" and preferred that result to the minced.

I am just a numb cheese eating American... I know nothing about Shep.Pie or Cottage Pie !!... I have heard about Shep. Pie and came on here to see how it was prepared ! sure sounds like a lot of Divas on here !!

Well done Neil. As a Canadian having gone to the US many times I completely agree. TOO MUCH CHEESE. No wonder they are always looking for more fiber in their diets, they're all bummed up.

She's heard my wailing for so long having the audacity to call Shepherds (an obvious short form of Sheep Herders) Pie created with beef incorrectly. Endless disappointment reading Ingredients labels.
Sometimes you're even hard-pressed to actually find lamb here. Fortunately with a few Brit stores you can get Bisto and the like.

I'm a Yank, not a Brit. Shepherds pie does not have cheese. If you like cheese, great, but then it isn't Shepherds Pie you are making, it is just another Pot Pie. It isn't shepherds pie if it has beef, it's just another Beef Pot Pie.

Dear dear Neil (a Brit)

We love you Brits, as you surely well know. But we, being Americans interested in and valuing great taste, simply DO love cheese (calcium, protein). Part of the gravy I make for this standard recipe (which is always strong enough to stand a few tweaks here and there, be brave ye redcoat.) contains a cup of shredded Havarty.

Also, I will have you know I also add carrots in large amounts and sometimes even green beans :). Try it, ancestor of mine. You will like it. And maybe a touch of garlic as well.

I laughed out loud when I read the header. I wasn't offended, I must be used to my daughters quick wit with a sarcastic flair.. recipe sounds good! We love "cottage" pie, but we do call it sheppards pie in our house! and We put the mixture over mashed potatoes, not under.... to each his own!

Can we please respect the English language? A shepherd is one who herdssheep. Therefore, shepherd is spelled with two "e"s. Therefore, we are talking about shepherd's pie -- and keep the "a" out of it!

Thanks for the recipe. Every dish has its fundamentalist defenders i'm one of them regarding paella. I did mediterranean version of cottage pie, with lauril olive oil a bit of white wine with the meat, and artichokes as garnishion. Enjoy!

I have yet to make this recipe. But I will say that Americans do have an obsession with cheese! It is ridiculous we Americans put cheese on everything! I do not find this offensive. He is just stating a FACT.

Great recipe, although I don't like lamb and would use beef or maybe try it with chicken breast. It's all about the fun of cooking and trying things you like. As for Neil being rude ..I didn't think so I read it for. The humor I am sure was meant. I'm American and I don't add cheese to anything including pizza. Cheese changes taste and texture when cooked or melted and I don't like it. Once in awhile i will eat a slice of good sharp cheddar but that's about it
