CHEESE RING
1 lb. grated sharp cheddar cheese 1 c. chopped pecans 2 c. mayonnaise 1 onion, finely chopped 1 garlic clove, pressed 1/2 tsp. Tabasco 1 c. strawberry jam Mix first 6 ingredients together thoroughly. Place in greased ring mold. Refrigerate overnight. Unmold into serving plate. Place strawberry jam in center. Serve with crackers.

I use scallions instead of an onion for 'color'. I like that it says to refrigerate overnight because, to me, it takes a while for the flavors to meld. I serve mine with Triscuits because they go well with the recipe and are a nice, sturdy cracker.

I use both Strawberry Preserves and green mint jelly side by side in the center at Christmas. I serve this with Carr's Table Water crackers.
