GRANOLA BARS | |
1 cup (2 sticks) butter 1/3 cup corn syrup 1 cup brown sugar 1 teaspoon vanilla 4 cups oatmeal 1 cup coconut, flaked 1/2 cup walnuts, chopped (optional) 8 ounces marshmallows 4 Rice Krispies cereal In a large saucepan, over low heat, melt and stir butter, syrup, sugar and vanilla. Stir in oats, coconut and nuts. Cook over low heat, stirring constantly for 3 minutes. Stir in marshmallows and when melted stir in the Rice Krispies. Using buttered spatula, press mixture evenly into buttered 9 x 13 inch or jelly roll pan. Cool. Topping: 1/2 cup chocolate chips 1/2 cup peanut butter In a small saucepan melt chips and peanut butter. Spread over oatmeal mixture. Cool. Cut into squares. Serving Size: 4 |
