LIBERIAN COUNTRY CHOPS 
1 pkg. frozen chopped spinach (kale, collards may be used)
1 c. raw rice
2 tbsp. butter
Dashes of hot sauce
Salt (opt.)

Cook the spinach as the package directs; drain well. Boil the rice in 2 cups of water for 14 minutes or until done. Mix the spinach, rice, hot sauce, butter and salt.

Variation: To make this a heartier dish, add cubes of meat or poultry (ham is especially good). Cashews sprinkled on top are a nice touch.
