KANSAS FRIED CHICKEN 
2 whole chickens, cut up
4-5 cups vegetable oil
1 cup flour
1 cup bread crumbs
3 whole eggs
1 tsp. garlic powder

Preparation:Preheat oil in large electric skillet at 350°F. Rinse chicken pieces and place in a bowl to begin batter process. Place flour, bread crumbs and lightly mixed eggs into separate shallow bowls. Add garlic, salt, and pepper to flour bowl.

Batter Process:Roll chicken piece in egg bowl. Transfer piece to flour bowl and roll. Return floured chicken to egg bowl and quickly roll. Next, transfer piece to bread crumbs and roll. Place chicken piece into preheated skillet. Continue batter process until all pieces have been battered. Fry until done and place on paper towels to drain. Call youngin's, say Grace, and eat with fingers.

Serves 2 adults and 12 children.
